Mash high temps still same OG?

So I ended up around 156 for my mash for an amber ale, but my gravity readings were spot on. I can still have unfermentables and still get a correct gravity reading right? Meaning that even though my OG was spot on I could still have some unfermentables ?
 
Yes the larger sugars are still soluble and contribute to specific gravity.

I do find that with a step mash compared to a single infusion, I usually get a few extra points of OG and they invariably contribute to a higher FG.
 
Yup! Like Yooper said, fermentable and unfermentable sugars both contribute to original specific gravity equally. The only place you will notice a difference is the final specific gravity. The FG will finish higher with a high mash temp, and lower with a low mash temp...
