I am trying my hand at AG brewing this weekend and have a question for you all:

I have very soft water-basically snow melt and I am trying to brew a northern english brown ale with a target SRM of around 15.

I used a copy of Porter's residual alkalinity worksheet to develop a water profile that will work with this beer.

It suggests I add 3 grams of baking soda....

my question is that 3 grams per gallon or 3 grams total?

I assume you refer to Palmer's residual alkalinity sheet?

In any case, a significant quantity of baking soda may not be the way to go. The amount of sodium may prove excessive and the amount of alkalinity added may also be excessive. If using Palmer's sheet, its color-based recommendations for setting a target residual alkalinity are too aggressive and tend to produce 'alka seltzer' tasting beer.

Regarding the amount, you'll need to consult that sheet and figure out if it is reporting in total grams or grams per gallon.
