Need a sweet taste

Hello,

I'm currently working on a recipe, but right now I need to add another adjunct to offset these tastes I'm getting.

Right now my beer is bitter and sour. I think it tastes good, but I want to add something to make it sweet/mild.
What type of adjuncts will give a sweet/creamy/mild flavor?

I was thinking of doing honey.
 
Well sweet/creamy would definitely be lactose. This is an unfermentable sugar so it will definitely add to the sweetness. It is also derived from milk so it adds a creamy flavor as well.
 
Honey will dry it out more instead of adding sweetness. Go with lactose for a sweetness and still be able to bottle condition.

You could also play with using a higher gravity beer and/or a higher mash temp to get more residual sugar in the finished product.

Your best bet is to figure out how to reduce your bitter and sour flavors.

I like the bitterness and sourness , I just want to add more flavors that make it more complex :)

Would I be able too get the lactose I need out of milk chocolate?
