I have an ordinary bitter that I want to dispense out of the stout faucet, but I don't have Beer gas, just CO2.

Will it be all right to carb it, then crank up the 30 PSI to serve the beer, then just shut off the gas or turn it back down real low to try and eliminate the possibility of over carbing the beer?
 
Yes you can do that.

You can also remove the restrictor plate and serve it @10psi like a normal faucet. What are you tying to do?
 
I know I can't get the mouth feel without out beer gas, but I was trying to get the cascading head....is that not possible with CO2?
 
Yea, you'll get some, but it won't be as persistant as a thick stout because of the lighter body.

You'll also blow through more gas obviosly.

Nothing to lose. Give it a try.
