So, seen a couple recipes out there for currant mead. I have 3 cups of red currants ready to be fermented. Fresh from my bush, cleaned and frozen twice. So, I was wondering if anybody in the forum had made a currant mead, and if so, straight red currant or add another flavor?

I'm not overly fond of the red currants, black currant is awesome though. 3 cups is what... 7 dl? Not very much, so a 1 gallon batch?

Ten pounds of currants
Five pounds of raspberries
Fifteen pounds of honey
Yeast nutrient
Pectin enzyme
Bordeaux yeast

That's a 5 gallon recipe, just scale it down.

But straight up honey, water, yeast and then red currants in secondary could work.
