just wondering if it would produce an interesting/good beer to use different types of yeast in the same beer for fermenting.
 
Interesting, maybe. Good... probably, people blend yeast all the time, whitelabs evens sells vials of blended yeast. WLP060 and WLP080 for example
 
I've blended yeast on multiple occasions. The best I've ever had was a blend of WLP500 and WY3711. Fruit and spice combo was excellent.
