OK I'm really looking forward to brewing a porter this thursday may 18 but the only yeast I have handy is a 7g packet of Cooper's dry yeast. I just wanted to know what you guys think, if I should wait till I can get to the LHBS and get my hands on some Safale 56 (on Monday the soonest) or if I should be good to go using the Coopers. Not worried about flavor from the yeast so much, got a ton of other stuff in there to take care of that for me. Thanks in advance.

Joe

Go with the Cooper's, but since you have the time, make a starter. 7g is a bit small.
