I'm going to brew an imperial blonde ale kit tonight. According to the instruction sheet, it will have an IBU of 26-30. My wife wanted a fruit beer, so I am going to add strawberries. I am new at this, so I am wondering if the IBU might be a bit much with the fruit. Would I be wise to leave out some the hops?
 
I think that's about perfect. That's really not much bitterness and the strawberries will add even more sweetness so you want at least a little bitterness to balance it.
 
Normally I would say that's pushing the high end for me for a fruit beer but if it's imperial strength I agree that's probably good. I usually drop the IBU's on the base recipe down a bit when adding fruit (for example I make a typical American wheat at 30 IBU but drop it down to more like 19-20 when adding fruit).
