Hi I am going to be making 2 lagers tomorrow and was wondering if I could boil the water to rehydrate today in an erlenmyer and then use it tomorrow?
 
I don't see why not as long as you keep it sanitary between now and then.

I have used straight filtered tap water heated in a microwave to 90F before and had no problems. My thoughts on using non-sterile filtered tap water is that I used to top up all my extract batches with gallons of the stuff and never had an infection; so if it's good for the goose (beer) then it's good for the gander (yeast) :D ....... but I DO keep my fingers crossed everytime I do it

Sure. Just cover it with foil sprayed with StarSan.
 
Always found its hard to measure the temp of liquid in a flask.

I use an infrared thermometer for my non-contact temp measurements but it won't work on the outside of a stainless pot :(
