Hi, looking for advice.
This is not my first brew, but the first with my new handy adhesive Fermometer!
I use a 6.5 gal plastic fermenter and used the following recipe:
9 lbs amber DME
1 lb Caramunich steeping
4 oz various hops
Safbrew s-33 1 1/2 11g packets

They recommend fermenting temps of 59F to 75F
What do you guys suggest for the best performance?
BTW, it was gurgling thru the blow off hose in less than 2 hours and it is currently 70F.
 
My flavor goal is a slightly spicey, somewhat bitter Imperial IPA. Beersmith estimated my IBU at 70. Thanks

If you are looking for bitter, then you might want to lower the fermentation temp in order to avoid fruity off flavors from the high temp.
