So I want to know the pros and cons of using a yeast cake instead of washing and pitching yeast. My sanitation is excellent (in my mind) so Im not worried about that. I brewed a pale ale with simcoe and cascade whole hops. I plan on brewing a black ipa next to put right on the cake. I used wlp001. Using whole hops seemed to cut down drastically on the hop trub so Im not too worried about that. The pale ale og was 1.056 and i want to shoot for 1.070 for the black IPA.

Ive read racking on top of the yeast cake could create some off flavors and sometimes a meat smell. There is also the issue of over pitching.

Thoughts? Recommendations?

Lots of people do it and say it works great, I have never tried it myself. It is overpitching, if you are okay with that go for it.
