Do i wait for ferment to start??

Im brewing bm's centennial blonde as we speek and this is my first time useing a ferm cabinet. Do i let the ferm start at 75 then drop the temp to 65, or just pitch and let cool. Im using notty dry yeast

I always try to pitch as close to my target fermentation temp as possible because healthy yeast will begin converting sugars almost immediately (even if you aren't getting any visible signs of fermentation yet). So, I'd rather have my yeast start working at say 65 right from the start rather than have them start at 75 for a few hours until the wort is finally able to cool down.
