I'm wanting to use up some specialty grains and yeast that I have lying around. I thought I could pickup some hops and some DME and make something out of what I already have. I'd love to use them to brew an ESB but I have no idea where to start (I've only brewed 1 partial). I have:

1 Pkgs London ESB Ale (Wyeast Labs #1968)

1.00 lb Caramel/Crystal Malt - 40L
0.88 lb Biscuit Malt
0.88 lb Caramunich Malt
0.88 lb Melanoiden Malt

No idea if I can make anything good out of this or what type or quantity of hops to use. Any suggestions?

I think that would work well. You'll have to add 3.5 - 4 lbs of DME to get the gravity up to where you want it. For hops I'd probably stick with the traditional English pale varieties - Golding, Fuggles. Might also try Challenger or Northdown. You'll want 30-50 IBUs so you're gonna need a fair amount of hops.
