some of you may remember, I have an "ancient Orange Mead" that I started in August '09.
Some 'things' got changed around (it was our first time) and I endured a couple o' sleepless nights, but we seem to have gotten over the hill.
It had finished fermenting about a month ago.
Two weeks ago I back sweetened with brown sugar and cinnamon stick.
I saw tiny fizzes for 3 days after that but then it seemed to stop all together.
It has been still for almost two weeks now.
I tasted it and it is high gravity (haven't taken a reading yet) and just a tad sweet.
What would be the next best set of steps for me to take now?
I think it would be acceptable but if there is anything I can do to improve it I want to try.
Could I cut it with quality water (that doesn't even sound right, so I'm guessing "NO")?
What about a fruit juice , something not overpowering?
