If I were to take two 5 gallon extract kits to create ten gallons, would this work out? Or is there something else I need to know, also After we boil in keggle can we put the batch into two different five gallon fermenters? Any help would be much appreciated !!!!

Yup..
Split between 2 fermenters and you are good!

Do you mix both batches together before bottling, I guess I'm just worried about the two batches tasting differently

I wouldn't recommend mixing them before bottling, you just risk oxidizing the finished beer. Using two fermenters would be the perfect opportunity to use two different yeasts to get a feel for the differences between them.
