Is it possible to use old champagne bottles that have the plastic stoppers with the metal screw covers to store brew?

Im just worried it wont be sealed enough..
Anyone have any experience on this?

Depending on the bottle, you could actually cap it. If you put a cap on the top and it looks like it will fit, you can get it with the red double lever capper. You may want to flip the metal plates to the larger opening.

usually the "american" bottles are capable. A safe bet is any beer that comes in a champagne bottle i.e. DFH and Jolly Pumpkin

Many (most?) champagnes are bottle-capped during part of the the process. The corky/plastic things is only used in the final closure of the bottle.
