I picked up a six pack of Mild Winter last week and love it. I want to try and clone this beer.

From Goose Island:


Brewmasters Notes:
Toffee brown, medium-bodied, with a creamy head and an aroma of raisins and freshly baked dark bread. Mild Winter’s rich caramel malt and spicy rye flavors are sure to take the bite out of whatever Old Man Winter brews up for you this year.

Recipe Information:

Style: American Mild Ale
Alcohol by Volume: 5.6%
International Bitterness Units: 28
Color: Toffee
Hops: Willamette, Tettnang
Malts: 2-Row, Carapils, Dark Chocolate, Roast Barley, Rye Flake

My recipe formulated for 3 gallons:

4.50 lb Pale Malt (2 Row) US (2.0 SRM) Grain 69.77 %
1.25 lb Cara-Pils/Dextrine (2.0 SRM) Grain 19.38 %
0.50 lb Rye, Flaked (2.0 SRM) Grain 7.75 %
0.13 lb Roasted Barley (300.0 SRM) Grain 2.02 %
0.07 lb Chocolate Malt (350.0 SRM) Grain 1.09 %
1.00 oz Williamette [5.50 %] (25 min) Hops 22.0 IBU
1.00 oz Tettnang [4.50 %] (5 min) Hops 5.2 IBU
1 Pkgs California Ale (White Labs #WLP001) Yeast-Ale

Est Original Gravity: 1.057 SG
Est Final Gravity: 1.013 SG
Estimated Alcohol by Vol: 5.76 %
Bitterness: 27.1 IBU
Est Color: 13.7 SRM


I don't plan on brewing this till the start of next year and I am looking for any suggestions on tweaking the recipe before I start.

Did you ever try that recipe? How did it come out? I had some Goose Island Mild Winter at a bar on tap this weekend and thought I'd like to try a to make a clone.
 
i'd like to hear updates as well. I'm thinking of brewing this next.

Few questions on your grainbill:

20% carapils? seems like a ton to me. and only 8% rye? also 13.7 SRM seems a bit light to me, i thought i remember more of a deep brown. 16-18 or so?

I'm struggling a bit with FG on this, as it's been ~9 months since i had it. I can't really remember the body. I remember it being fairly easy-drinking though. 1.014 sounds like a good starting point at least. So about 1.056-1.057 OG

With all that, I'm thinking this:

5.5gal, 72% eff

10.00 lb 2-Row (82%)
1.25 lb Flaked Rye (10.3%)
0.50 lb Carapils (4.1%)
5.00 oz Dark Chocolate 420SRM (2.5%)
2.00 oz Roasted Barley 300 SRM (1.1%)


Single infusion, 15...4? 5?

Hopping - I have no idea. Site lists Tettnag and Williamette; I'd probably lean towards Tett for a clean bittering and williamette for flavor addition (10min?).

then.....yeast??
 
How long (time) did you have this in the primary for? It will be my first attempt at a winter ale like this. I plan to use 1 oz Wilmette at 60 min and then 1 oz Tettnang at 10 min.

Anybody have results on this yet?
