So I just put together a 5 gal. batch of Sourwood mead.

Here is the recipe:

12.25 lbs of Sourwood Honey
3 tsp yeast nutrient mix
Spring water to 5+ gal.
1 L. starter of Montrachet

SG 1.096ish

Aerated the crap out of it with my drill.

Anyone done a Sourwood mead?

Thoughts?

I'm surprised you got a gravity that high with only 11 pounds of honey in a 5-gallon batch.

Sourwood is a marvelous honey and makes great mead with a light flavor.
 
Well, I put 2 gal. water in carboy, added all the honey, topped it up with water. Aerated, pitched, aerated, took gravity reading. I mean it was only 3 gal. of water.

I don't know.

Bit of an edit, used 12.25 lbs instead of 11.....that's right I can't add oz. or convert oz to pounds in my head as well as I thought I could.
 
I never even heard of Sourwood Honey, that's what I love about meads.
How does the honey taste? Does that initial flavour come through with the hot batch now?
