So I need an evaluation on my first ever formulated recipe. I decided on a "traditional dunkelweizen" extract recipe.

6.6 Wheat LME
1 lb CaraWheat
1/2 lb Special B Malt
1/2 lb Caramel 120L
1 oz Hallertau pellet
1 oz Tettnang pellet

Steep Grains @ 155 for 30 minutes. Add LME, bring to a boil. Add 1 oz tettnang @ 60, .5 oz hallertau @ 10, .5 hallertau @ 5.

According to Hopville, this comes in @ 5.4ABV, 20 SRM, 18.0 IBU

I need to know if this is good? I thought it might be a bit dark....

Of course I had already ordered the grains before I saw your reply! Thanks for the input. I think I will cut the Special B in half to see if some of those flavors subside.

As long as its carbonated, ill drink it. lol.

Im thinking about piggy-backing on this recipe. Im thinking about 1lb CaraWheat and 1lb Dark wheat as my steeping grains. Also , im thinking about chucking some clove into secondary and maybe some bitter orange peel.

Will this be too dark ? (there's no chocolate malt so im thinking not ???)

Do I NEED to add some non-wheat derived grains for any reason or is it ok to use the wheat LME as well as only steeping the two wheat grains?

Also, any other reccomendations for additives to make this a fall beer that can also hold up in the colder days to follow?
