I just had my first bottle of weyerbacher riserva 2010 and wow is this stuff funky and sour. It also has some acetone to it.
My question is: I have a mason jar of old sour dregs building, will it be harmful to add this to the collection if it already has some acetobacter? Anyone know what is in this?
 
I only use dregs from beers I like, and I'm not a big acetic fan. If you are careful and don't expose the beer to much air it should be an issue (you don't get acetic acid from ethanol without oxygen), but it doens't seem worth the risk to me.
