I'd drink it, although if I was brewing I'd probably use American ale yeast. Otherwise looks perfect, good luck brewing.

Mike- You sold me on this one --- I'm going to brew this next weekend re-pitiching yeast from my stout. Then maybe brewing Jamil's Evil Twin after that...
 
Nice. Obviously feel free to play around with the recipe. If you like Simcoe you may want to do equal parts Simcoe & Centennial. I love Simcoe but find it to be really strong so that's why I do more centennial.
