I'm brewing a winter warmer today, and can't seem to determine what beer classification it should fit under (for beersmith purposes). Also, I'm substituting the ale in the recipe (danstar) for safale 05 because I have it around, that shouldn't be a problem, should it?

Recipe below

* 11.5 lbs. Crisp Maris Otter
* 1 lbs. Simpsons Crystal
* 0.25 lbs. Simpson's Chocolate
* 2 oz. Willamette (60 min)
* 1 oz. Willamette (10 min)
Danstar Windsor Ale Yeast.
 
crap, another question
The recipe indicates "Simpson's crystal". What the heck is that? The recipe is from Northern Brewer, and they tend to be pretty generic sounding with their recipes...
 
Crisp and Simpson I believe are brands. Crystal malt, also called caramel malt, usually followed by the color rating(10, 20, 40, 60, etc). In beersmith MO would be Pale Malt, Maris Otter its a few lines lower in the chart. S-05 will give a cleaner flavor, I like it and use it often.
