What is the best way to use my cocoa nibs in my secondary? Just throw them in? Steep them? Make a tea? Hot water or vodka?

Throwing them in is messy, works better if you keep them in a hop bag that's weighted down. Soaking them in a good quality alcohol for a few days to make a tincture works well, and then you can add the tincture in small amounts, checking the taste to get to the level you want it to be.

Do you know whether or not this is a secondary thing or for kegging? I'm assuming the profile will mellow some with age too

Soak the nibs in just enough vodka to cover for three days, then dump the whole works into your secondary vessel and pour the beer over it.

"Messy"? No more so than everything else that ends up sitting in the bottom of a secondary vessel.

[edit] I definitely wouldn't do this in a keg...

Cheers!
