Hi,

it's been three days since I pitched Wyeast Roselare and Wyeast Lambic blend on wort which was 35.5 IBUs...

I just realized that I overlooked the <10 IBU rule for lambics...should I do anything to correct the situation, or wait and see what happens?....

Will the lambic cultures survive high IBU levels?

You should be fine, the sourness might be lighter then usual but the lacto culture Wyeast uses isn't too bitterness resistant.

On the other hand, the beer may taste pretty weird/bad. I think a hoppy sour can be good as long as there is no bitterness. Your best hope is to give it a long while to age
