The reply from a local beekeeper:

'The honey I have in 5 gallon pails is fall honey made
from goldenrod and astor nectar (my favorite). It is a little stronger than
clover honey and it is crystallized but can be reheated to liquid easily. I am
asking $100.00 for a pail. I also have clover honey in smaller quantities ( 3
and 5 lb jars). '

Would you use this type of honey?
Is the crystallization an issue?
 
1. yes, clover honey is ok, but I like other types more.
2. Not a problem. Heat it a little & the crystals dissolve.
 
Absolutely! That's about the going price for bulk honey. It isn't a smoking deal but it's about average. My suggestion would be to meet the beekeeper in person and taste the honey. If it tastes good, it'll make good mead. From the description it may be a little stronger than clover. The darker honeys typically have more nutrients and ferment better but they are also stronger in flavor. Nothing wrong with that if you like the taste.
