just topped off of wine that I had racked into my secondary with some extra concentrate that I had to eliminate that airspace between the airlock and the wine. The OG was 1.098 and had gotten down to an SG of 1.012 before racking. After adding more concentrate to eliminate the airspace the SG went up to 1.020. My question is how will I be able to calculate the amount of alcohol that will be produced now that I've gone up and down with my hydrometer readings?

Your OG will now be 1.106. That is 1.098 from your initial gravity reading plus .008 from the juice you added. Considering your OG as 1.106 should be fine for calculating abv.
