I was interested in brewing a Gluten free cream ale with corn/maize. Now, I
just want to impart the corn taste in my final product. Will a pound or two steeping in my boil give me that corny taste?

Don't forget that corn will almost fully convert, so your final gravity will likely be really low. To up the final gravity and help with the Cream Ale flavor you can use some Lactose sugar as it's not fermentable and will help to increase some head retention.
