I'm looking for a very clean yeast the ferments well at low ale, high lager temps.

I ultimately want a yeast the has no chance of producing any significant amount of esters that lead to off flavors (such as bananas). Something that works even if my A/C breaks and I'm up to 70 degrees or so

Whats my best yeast/technique to use?

WLP 872, Cry Havoc would also fit the bill. It ferments clean, works at low ale or lager temperatures, and makes a tasty IPA, as well as good lagers.

S-05 would fit the bill, but may flocculate out at real (55F) lager temperatures. At 60F, it works fine.

I don't know (yet) about pacman, but I have a smack-pack of it in the fridge, just waiting to see how it does.
