I can never make a beer recipe kit without adding something of my own. I soaked one package of plain oak and one package of toasted oak chips in Dewars scotch in the fridge for one week prior to brewing. I made the baltic porter kit as it was supposed to be but strained the oak out of the scotch and added it directly to the primary. I did make a rather large starter to prepare for this though. The only other thing I changed was switching to Wyeast American Ale yeast to better fit the temp of our apartment. Left it in primary for 2 weeks then took it off the yeast and oak and racked to secondary for 1 month. Anyways, recipe turned out excellent. Just enough of a hint of scotch and oak to be noticible but not overpowering.
