I've got my first batch of homebrew in a 5 gallon carboy in my basement, which I started last week. I'm leaving for San Fransisco for two weeks before the brew will finish fermenting. Can I let the brew sit in the carboy after it is done fermenting for two weeks if it is in the dark? and then bottle it when I get back? the basement is dark and cool.

Yes, I leave my beers in primary for a month then bottle as a matter of course.

Many of us do...you can search for long primary or yeast cleaning up after itself and see the benefits of doing it.

:mug:

I would personally leave it for 3-4 weeks in the primary if you're not going to do a secondary. ..

It's the best thing you could do for it, in fact. I don't bottle anything less than 21 days from pitching yeast.

You can even wait till' a week after you get back;)....You will be very happy with the results.
