We've had a batch of brown ale in bottles for about 5 weeks now, waiting for them to carb up - they're stored in boxes in a room temperature room. We took a couple out, chilled in the fridge for about a week and cracked them, and got flat (but tasty) beer. So we chilled a couple more for a few more days, same problem.

After some thought, we were having trouble remembering if we primed (We use Coopers drops) or not, so we decided to recarb and started popping tops. The first 4 that we popped were carbonated beautifully, so we stopped and chilled a couple more. Sure enough, flat beer again.

What about this beer is giving it great bubbles and a nice frothy head while warm, but turning it flat while cold??? Is it possible that we did forget to carb?

well the beer is definitely carbed since you are getting head at room temp. The issue is that CO2 dissolves better into water at colder temperatures (kinda like when your pour coke from a 2L bottle out of the fridge). Id try just leaving it in the fridge a little longer and seeing if it carbs anymore.

Of course, it's POSSIBLE that you only remembered to carb SOME of the bottles, and that the ones you opened warm were also, coincidentally, the ones you remembered to carb.

That'd be quite a coincidence though.

It is true that CO2 dissolves into solution better when cold, and will push out of solution when warm. So if you open a warm bottle the CO2 will come out much FASTER than when it is cold.
