Sam75 made an awesome honey wheat a while back....he might chime in here if he sees this...

A quicks search on here might find you the recipe too....

Here's a honey wheat from my LHBS.

HONEY WHEAT BEER

Deep golden hue, a bit hazy, mild bite, fragrant finish
5 lbs. wheat unhopped malt extract
2 cups (~1 1/2 lbs.) honey
1 lb. Canadian Honey malt
1/4 lb. German Melanoidin malt
1/2 lb. Munich malt
1/2 lb. wheat malt grain
1 oz. Tettnanger hops (bittering)
1/2 oz. Tettnanger hops (flavoring)
no finishing hops
1 pkg. Windsor ale yeast (or Wyeast #1007, #1338, #1056, #1272 or White Labs California or German Ale Yeast)
1 pkg. Bru-Vigor
3/4 cup corn sugar or 1/2 cup thoroughly dissolved honey for priming
O.G. - 1.050 -- F.G. - 1010
