This is my take on Foreign Extra Stout. Aiming for the less sweet, more roasty side of the style. I decided to go a little out of style and push the later hop additions to balance the roastiness. If the gravity was a little higher it is almost a RIS. Anyway, brewed this last night, excited to see how this one comes out!

For 3 Gallons:

3 lb Dark DME
2 lbs American Two Row
1 lb roasted barley
1 lb flaked barley
1 lb Brown Malt
.75 lbs Special B
(Mashed Low)

Hops:
60M .5 oz Fuggles
10M: 1 oz EKG, 1 oz Challenger
Flameout: 1 oz EKG, 1 oz Challenger, .5 oz Fuggles

Yeast: S-05, Rehydrated and pitched at 60F

OG: 1.078
 
Oh noes! I think I have my first infected batch. Drat!!!

I'm wracking my brain trying to remember- I'm pretty sure it could be Brett- I did a batch recently with Wyeast Trappist Blend, which contains Brett. Could it have gotten into my tubing, etc.? Is there a way to distinguish a brett infection from other wild infections? If this is brett, should I let it ride? Foreign Extra Funky Stout anyone?
