I am planning on doing a Saison/Farmhouse Ale. After buying the wrong yeast last week, it got put off. I was planning on using 3711 for this, but my LHBS doesn't carry it. After reading about the wyeast Belgian Saison strain, I decided to not use it. My LHBS guy suggested 3787. I plan on fermenting on the high end of this yeast tolerance (about 78 F).

Will this yeast work out well for this style?


This is the recipe I was planning on using.

Batch Size: 5.500 gal
Boil Size: 6.750 gal
Boil Time: 0.000 s
Efficiency: 70%
OG: 1.059
FG: 1.015
ABV: 5.7%
Bitterness: 27.5 IBUs (Tinseth)
Color: 9 SRM (Mosher)

It won't have the spiciness that the saison yeast has. It has more of a fruity ester and clove like phenol character. It will certainly attenuate well. I use it for my big belgians, IMO it's a little lighter on the yeast character then other strains.
 
I would substitute the English pale malt for Belgian pilsener malt. The turbinado sugar has a molasses flavor that I wouldn't like in a Saison. Just my opinion. Maybe move the last hop addition up to 5 min, get more aroma. Looks good though.
 
Just to chime in about this yeast. It is SLOOOOOW. It took just 2 or 3 days to go from 1.060 to 1.020, but it has dropped another .006 in the last 8 days. I am about to rack to secondary onto some Brett to help dry up with some funk.
 
I ended up making a tripel instead of the Saison. Og was 1.086 after 3 days its at 1.028, its still going strong, so I imaging it's lower than that now. Started at 68 F and ramped up to 74 now. I also pitched a 2L starter. Maybe I have low standards, but I think 1.086 to 1.028 in 2 days is pretty quick.

I have never used this strand before but you should see what can be done with wlp001 and some of the whitbred stuff. I'm talking 85%+ within 48 hours.
