I made a pilsner yesterday, but made a mistake with the mashing. I typically do single infusion mashes, but the receipe called for a pretein rest at 100F for 1 hr. I did this after which I realized this was for a step mash. I then continued with a single infusion at 150F for 60 min and sparged.

What will this error do to my pilsner if anything?

So, you did the protein rest for an hour and then the sacc rest for an hour?

Likely little to nothing other than break down some longer chain proteins to improve clarity potential. I generally do a protein rest for 15 minutes for this.
