leftovers. decent recipe?

1lb munic
1lbs of carapils
1lb of chocolate malt
1lb of dark DME
1lbs of aromatic
2lbs of honey malt
and have about 10lbs I of red wheat I was going to use.


have them sitting around from previous batches and not sure what to use them for here. any ideas guys as I'm fairly new to brewing and want to use the stuff before it goes bad
 
well, you have a good start on a dunkelweissen IMO. I don't do AG, so I wouldn't know the lbs necessary to pair your wheat with pilsner malt to make a 50/50 or 40/60 wheat/barley mix. Anyway, if you are going AG I'm sure you know how to come up with that part. To that I would add your:

1 lb munich
1/2 lb carapils
1/4 lb chocalate
1/2 lb aromatic

and your dark DME


add

1oz Hallertauer @ 60 and
1/2 oz Hallertauer @ 30

Wyeast Bavarian Wheat yeast

should be interesting
 
the yeast i had on hand was belgian wit wlp400
ended up running the full 10lbs of wheat
1lb munic
8oz of carapils
4oz of choco
6oz of aromatic
1lbs of honey malt
1oz of liberty as I had few ounces left over.
just hope it comes out ok as I'm fairly new but if nothing else I have a friend who works for beer and I could use my lawn mowed
