I barrelled my cider 2 wks ago an I'm waiting for it to clear now but i had a sneaky taste an it's very dry/harsh. Will it sweeten up any? On a plus note its stating to smell ok.

Any idea what the alcohol content is? Did you backsweeten at all? I don't think sweetness will reappear in something dry.

Hi i added sugar after barrelling it as per instruction not sure of alcohol content. Can i add more sugar?

It won't get sweeter and any sugar you add will just be fermented.

Cider can take a year or more to mellow.
