I forgot to throw in some Pectic Enzyme last night when I started my mead.

12 Lbs. Wildflower Honey
2.5 Lbs. Elderberry Jam/Jelly
4 gal Water
10 g. 71B-1122

I used Go Ferm and was seeing action an hour later. I am wondering if I should add some PE tonight (24 hour mark) when I mix the must or if I should wait until after fermentation is complete. Also, do you think it is necessary to use PE since I only used 2.5 Lbs. jelly for this 5 gal batch?

Ie done it several times, late addition of pectic enzyme. Worked fantastic! Mead was clear in a week.

Now if I add some fresh crushed Elderberries to the secondary in 7 or 8 months would I go ahead and add some more PE at that time too?

Thanks
