I have a wild yeast cranking away on a wheat beer right now.

Question: Have you ever used a wine yeast on beer? If so what were the end results?

Assume pitching champagne yeast in a Saison doesn't count in this case.

I thinking I'm might have a wild yeast that behaves like a wine yeast. It has no krausen so far. Just like Edworts AW pitched with Monty.

I pitched a 1Ltr wild starter around 7PM last night, so its a bit early.

I have lots of yeast in my 5 gal fermentor ~ 1" of yeast.

Curious to hear your thoughts....

I just listened to a podcast about brewing with wine yeasts. Really good info on using wine yeasts with beer yeasts. The thing that caught my attention was the off-flavors produced by the wine yeasts can be really good. I'm thinking about using one of the wine yeasts that produce a 'cherry' flavor to turn my chocolate stout into a black forest stout.

It's on Itunes.
