I brewed my SN celebration ale clone, but I used Canada Malting Superior Pale Ale Malt. This beer blew me away!!! To date, this is the best beer I have ever brewed and I want to attribute it to this grain.

It was a complete random purchase for me, I saw it and did a "yeah what the heck" and I'm glad I did. I don't know if I can go back to regular 2 row. I'm guessing its just roasted a tad longer than normal 2 row? What I like about this grain is it answered my quest to add a tad more maltiness to my ales. I don't have my recipe in front of me, but IIRC my IBUs were around 66, and this beer struck a perfect balance between the hops and malt. I taste the BAM! of the chinook a very smooth maltiness along side it, and its what I have been trying to do for a few batches now. I love it!! I tried MO, but this...this is for me.

I had to share.
 
2-row is probably the blandest-tasting of the base malts. Pale malt is kilned a little longer, so it develops more melanoidins.
 
I understand it is an approximation of Maris Otter. I use it all the time & love it; that & Great Western Pale, which is basically the same company.
