Howdy,

Just wanted to post an upcoming brew I have scheduled, both for some critique & simply to share:

'Naughty or Nice' Winter Warmer (5gal Partial Mash)

Malt (60min single step @ 154F, batch sparge @ 170F, ~70% Eff)
2.00# US Two Row
1.00# CaraPils
1.00# Victor
1.00# Crystal 120
1.00# Special B
6.6# Light Malt Extract (60min boil)

Hops
1oz Chinook 12.7% (60m)
1oz Willamette 4.5% (10m)

Spices
Vanilla, Star Anise (flash)
Orange Peel, Nutmeg (secondary)

Yeast
Wyeast Laboratories. Belgian Strong Ale 1388

Stats
OG 1.078
FG 1.019
26 SRM
26 IBU
~8% ABV

Not sure of amounts or schedule for spices yet - suggestions are welcomed.

Also, I don't have any experience with this yeast - will I be ok just smacking & pitching? or is a starter necessary?

I'd drop it to 4 oz of either the 120 or the special B, then use something in the 15-40ish range ~8 oz.
 
+1 on the Special B / C120 suggestions.

Love the recipe!

Suggestion for spices. You may want to put some of those in the boil to release the flavors. For 5-gallons..

Nutmeg @ 30min (a little goes a long way.. 0.1 ounces)
Star Anise @ 30min (1 ounce)
Sweet Orange Peel @ 10-15 min (1 ounce)

Vanilla Beans (soak 2-3 beans in a vodka a few days, and pour everything into secondary)

Some comments on the yeast from other brewers, for the White Labs equivilant WLP570.

i'm about to get my starter on this morning.

advice re: spice schedule is much appreciated.
