Conversion time at 150 degrees?

If you're not checking for conversion, you really don't know if it converted, no matter how long you mash. I don't quite get what is meant above by "false readings". If you still have starch, you will get a positive reaction when you do an iodine test. Anytime I've gotten a positive reaction for starch, I knew I had to wait longer.

OK...possible stupid question. If you are mashing dark grains for a stout how do you know if you converted starch to sugar with iodine? Doesn't iodine turn the liquid black if there is still starch?

How'd you know you had to wait longer? Did you have another method to determine the level of conversion? You can't know if it's a false positive if that's the only method you have.
 
I don't know how to explain it better than just point to braukaiser.com. Any time I have followed his steps, I've been able to see where I'm at with the conversion & have been able to get a good idea what's happening.

I don't disagree with the average times given, but I guess I'm thinking if you're out of the ballpark, you can let it rest for 2 hours & still not get good conversion. I'd rather test it.

It's entirely possible to get particles in your sample that will give you a false reading. Based on the gravity readings I get, I know I'm converting without an iodine test.
