Got bitten again by the home brew bug. Took a break for a few years and went into wine which was disappointing and other vices like pipes and cigars......

Now I'm back. Went to the local B&M to pick up supplies.

Here is my recipe:

5 gallon extract, with 2.5 gallon boil

HOUSE ALE

6.00 lbs. Light Dry Malt Extract
1.00 British Crystal 60L
0.25 Belgian Biscuit

1 oz Northdown 7.2% AA 60 minutes
.5 oz UK Kent Goldings 5.8% AA 30 minutes
.5 oz UK Kent Goldings 15 minutes
1 tp Irish Moss 15 minutes

White Labs Burton Ale Yeast

1 oz UK Kent Goldings Dry Hopped Secondary two weeks

Does this look balanced? Should I increase crystal malt?

First time using Dingemans Biscuit Malt. Is this enough for a background flavor?

Should I do a 90 minute boil or stick with a 60?

Can't comment on the recipe, but good to know there's a fellow cigar/pipe lover on here. Love me a Man O War or a little Frog Morton while I'm brewing :D
 
I like it! It looks good to me. A 60 minute boil is sufficient. What I would suggest doing is splitting the extract, and adding only 1/2 at the beginning. At the other 1/2 near the end. It'll make big difference in a 2.5 gallon boil, and create a fresher beer taste (more like an all-grain beer) without the "cooked extract" taste.

4 ounces of biscuit malt is enough, at least for me. It has a nice flavor, but with a dry finish, and too much is overpowering. I think your recipe is solid, just as it is.

MOW is great! Picked up a bunch $3/stick on joecigar.com when Joe is jamming which is a couple times a week. I like GL Pease Adbington and Westminster. :D
