What's the time frame for potassium sorbate? Do I mix it in let it set for a day then keg? Or can I do it all at once.

To answer inquiring minds, the standard protocol would be to let it sit a couple days before kegging or bottling, or backsweetening. I'd say a good 48 hours, and it doesn't work if you've got an active fermentation, the best way to go is let it ferment out dry, then sorbate, then a couple days later backsweeten to taste and bottle/keg.
 
Exactly as the post above. Mix PS with cold tap water until dissolved. Pour into carboy, let it sit for 48hrs, then back sweeten and force carb.
