My first mead is 28 days in and starting to clear. (1.102-1.004 - Dry Traditional Orange Blossom). It's still working but almost done here is my refrigerated gravity sample:

What yeast did you use ?

I started a gallon of Orange Blossom about 2 months ago using D47. I'm going to let it sit on the lees a while to get some of those citrusy notes from autolysis. How's the taste so far ? I haven't even sampled mine yet.
 
K1-V1116. I'm astonished at just how much citrus is coming through. It needs a touch more acidity and a little more tannic grip but I'm digging it. I'm going to rack it to glass this weekend and add a touch of tannin plus a wee bit of French oak.
