I've got several bottles of Abyss. Three Sucaba, a Firestone Anniversary ale 16 signed by David Walker, 2011 three philosophers, and some Ranger Creek single batch 2 and 4 to name a few. What beers do you guys hang on to and how long do you hold them?
 
Bottles of Abyss from '08-'12, a few bottles of Dissident from last year, a bottle of Jubel 2010, couple bottles each of VE 11.11.11 & 12.12.12, a bottle of Double DBA, a bottle of Consecration, and a couple others I can't think of right now. I try to limit myself to one bottle of new release Abyss and a cellared one per year, I'm going to leave those Dissident bottles as long as I can stand it, I'm trying to hold on to the Jubel until the next release (2020), and the rest I pull occasionally.

I'm just starting out with cellaring. I usually put a drink by date 5 years out on the low hops, high alcohol beers, but that doesn't mean some of them will be drank (drunk?) earlier or later than that date.

I'm in Texas. Cellars are only something I see on TV or the movies.

Cellars can also be a mini fridge like mine.

A keezer, brewing equipment, meat hooks, rusty tools, water treatment system, hot water heater, and a furnace :)
 
My cellar is a bucket in a dark and cool closet. That's the closest thing to a cellar you get in Texas.
