I made this today.
I started with a almost a gallon of tap water and boiled. *mistake* when I added fruit and honey it was too much volume.
So here is the recipe with water scaled down.

3/4 gallon water
Handful of frozen strawberry
Handful of frozen peaches.
1/10 tsp pectic enzyme
1/10 tsp wyeast nutrient.
3/5 lbs honey
Montrachet yeast.
Boiled fruit and water.
Added honey around 115
Pitched at 80.
1 gallon jug.
Voila.

Hey jcam...have you give this stuff a taste yet? What's it like? Any issues with clarity?

It cleared up nicely. In the process of moving so I don't know where I placed it precisely atm. But if it cleans up like my braggoy did flavor wise, I'm excited
