Tomorrow I am planning on brewing a cherry ale. I am use light malt extract and using cherry flavoring instead of actual cherries. I was wondering what is the best time to put the cherry flavoring extract in? I know putting it in the boil will boil off all the flavor. Should I just put it in when I re-rack to secondary?
 
I did a quick search on this and everyone seems to add extract flavor when racking at bottling time. If you use real fruit add that to the carboy and rack on top for secondary.
 
I just picked up a couple of bottles of 68 brix tart cherry concentrate. I'm sort of wondering about when and how much to add myself.
 
I would suggest using a cherry puree instead of cherry extract. If you use a puree, add it to a secondary. If your using extract, add it when you bottle.
