I am trying to buy some in bulk and so far have ordered Cascade and Willamette. Would order Citra, Amarillo, or Simcoe but its all gone. thinking I might order one more domestic and a European Hop. Found a good deal on Calypso and Hersbrucker and Hallertau. Trying to decide between Hersbrucker and Hallertau

Saaz
Cascade
Hallertauer
Columbus

And I'd be very sad at what I couldn't use. If the apocalypse happened however, I could still hit most of my styles with these.

Cascade, Willamette, fuggle and centennial. But would also have to have citra and Amarillo.
Hersbrucker and hallertau are the same.

  1. Saaz (essential for my pilsners)
  2. Centennial (with this, no need for cascade)
  3. Chinook (must have for my IPAs)
  4. Magnum (generic high-AA bittering hop for me)
I'd add a 5th, probably Hallertau, for all german beers without the spicey notes of Saaz.

I have cascade, williamette, and hallertau hop plants as I use these very often.

I will be looking to get centennial, chinook, and columbus next spring.

EKG, Saaz, Amarillo, Magnum

Could pretty much make anything I wanted with those.

Centennial
Simcoe
Magnum
East Kent Goldings

All I make are IPAs, CDAs, Barleywines, and Russian Imperial Stouts.

Amarillo - Probably my all time favorite hop
Simcoe - Essential in most of my IPAs
Chinook - Versatile for me. Strong Ales, IPAs (obviously), I even use this stuff in my stouts!
Cascade - Even more versatile. The first hop I ever fell in love with. Another must in my IPAs. Cant often pull this out over the others, but it wouldnt be the same without it.

Riwaka
Green Bullet
Southern Cross
Pacific Gem

High alpha new Zealand hops are clean bittering and not at all harsh. The Riwaka hop is the best darn dual purpose noble hop ever. I can't get enough of them...probably because I can't find them all the time.

Willamette - My go to for American styles
Styrian Golding - My go to for German/Bavarian styles
Fuggle - My go to for English styles
Amarillo - My go to for IPAs and other higher hopped styles

Fuggles, use it in my English/Irish ales
Kent Golding, love it for my stouts
Hallertauer, I brew a lot of German styles
Citra, haven't used it yet, but have plans too

Man this is tough, I have only been brewing for a year so there are many types I am yet to work with. Still only four would be tough.

If I had to choose today.

1. Centennial - This one was easy.
2. Amarillo- I am in love with this hop
3. Columbus - Love it.
4. Saaz - Have to have a Noble hop and this is the one I think I like the best.

Nugget - for bittering
Tettnang - for my stouts
Amarillo - for my APAs/IPAs
Citra - for my APAs/IPAs

Guess what. My favorite brews are stouts and IPAs, can you tell?

Citra - for my Pale Ale.
Cascade - I use them in 60% of my recipes for bittering and flavor.
Nugget - They make my Irish Stout the epic beer my friends claim it is.
Fuggles - They're that awesome shot of spice that makes my English ales interesting.

To be honest I can't think of a variety I'd wanna do without!
