Smash or ipa or apa. It is a very versatile hop that goes good with a simple grain bill and several hops.
Ipa.... I use em in my original recipe Badfish ipa along with centennial, citra, and amarillo which I brewed again last night. And in another recipe with Cascade, will gladly share either recipe if youd like. Pairing it with any of those 4 varieties will work great. If your like me youll be bulk ordering them before you know it.

Look up 'summit smash', and sub in simcoe.... One of my favorite brews
IMO it 's only for IPAs. You can use it in other beers but it's kind of a waste.
